Mathi Meen Kulambu Recipe in a Twin Palmyra Clay Kulambu Satti

Mathi kulambu is a Tamil Nadu classic β€” small, oily sardines simmered in a tangy tamarind gravy built from a fresh masala paste, no coconut needed. The sardines cook fast and soak up flavor even faster, which makes this one of the quicker kulambus to put together, but no less rich for it.

A Twin Palmyra clay kulambu satti holds the gravy at a steady simmer without letting the tamarind reduce too harshly, and clay's even heat means the delicate sardines cook through gently instead of breaking apart.

Step 1 – SautΓ© and Grind the Masala Paste

Heat 2 tablespoons oil in a pan. Add 1 cup onion, curry leaves, a handful of garlic, and salt, and cook on low flame until the color changes. Transfer to a mixer jar along with 1 teaspoon cumin powder, Β½ teaspoon pepper powder, 2 teaspoons chilli powder, 4 teaspoons coriander powder, and 1 teaspoon turmeric powder, and grind to a paste.

Cooking the onion and garlic low and slow before grinding brings out a depth the powders alone can't give β€” don't rush this stage or the paste will taste flat.

Step 2 – Build the Kulambu Base

In the clay kulambu satti, heat 3 tablespoons oil. Add 1 teaspoon mustard seeds and let them splutter, then add ΒΌ teaspoon fenugreek seeds. Add 2 cups chopped onion and curry leaves, and sautΓ© until softened. Add 2 chopped tomatoes and cook down.

Fenugreek burns quickly and turns bitter, so add it right after the mustard seeds crackle, not before β€” a few seconds too long in hot oil is the difference between fragrant and sharp.

Step 3 – Add the Masala and Tamarind

Add the ground masala paste along with lemon-sized tamarind water, and mix well. Cover and cook until the oil separates.

Letting the oil visibly separate is the clearest sign the masala is properly cooked through β€” don't move to the next step before you see it happen.

Step 4 – Cook the Fish

Add 750 grams mathi (sardine) to the pot. Cover and cook for 5 minutes on low flame.

Sardines cook fast and fall apart easily β€” resist the urge to stir them in vigorously. A gentle shake of the pot from side to side settles them into the gravy without breaking the pieces.

Step 5 – Finish

Add a handful of curry leaves and 1 teaspoon sesame oil, mix gently, and serve.

The sesame oil goes in raw at the very end, off the heat β€” this is what gives mathi kulambu its final aroma, so don't add it earlier or cook it further.

  • Season a new clay pot before first use by simmering water in it for 10 minutes β€” this closes the pores and prevents cracking
  • Keep the flame low once the fish goes in; sardines cook quickly and don't need a hard boil
  • Shake the pot gently instead of stirring once fish is added, to keep the pieces intact
  • Let a hot clay pot cool gradually before washing β€” never place it on a cold or wet surface straight off the heat
  • Hand wash only, no soap needed for most residue
  • Store fully dry, uncovered, to avoid musty odor absorption

Mathi kulambu doesn't take long, but it doesn't cut corners either β€” a proper masala paste, a tamarind base cooked until the oil separates, and sardines added right at the end so they stay whole. Made in clay, the gravy holds its heat and the flavor lingers. Serve it hot with rice.
